Other than chopping a lot of things, it was really easy to put it all in the crockpot and turn to low for 5 hours while I went off to a meeting. And it was so delicious! I only wish I had made it on a cold day, not a 65 degree day :)
Last night I made a recipe I found in the land of blogging or pinterest: Lemony Pasta with Goat Cheese and Spinach via Martha Stewart.
It was super easy and quick to throw together last night. I used pine nuts instead of walnuts, since we didn't have any! I also used the pre-chopped herbs(parsley & cilantro) that come in a tube as a paste. I find them in the produce section near bagged lettuce & while they're a bit more expensive, it is a huge time saver - especially for cilantro, which I can't ever seem to get all of the grit off.
Tonight is leftovers for Rob since I have a meeting. And then tomorrow night we're trying out another pinterest find: Slow Cooker Quinoa Chicken Chili.
It looks super tasty & of course easy - things necessary for weeknight meals!



All three of those look amazing. I'll may need to make the last one this week!!
